A duel NSW regional blend of 70% Hunter Valley Shiraz & 30% Hilltops Cabernet Sauvignon. This wine has an abundance of red & black fruited plushness from this classic varietal blend and infusion with organic Australian ginseng. Adding layers of earthiness and herbal complexity that melds into the tapestry of the wine.
The high natural antioxidants of the ginseng is used as an alternative preservative, protecting the wine during fermentation and maturation resulting in a wine with very low sulphites.
Unfined & unfiltered.
Minimal time in oak. Four months in in 5 year-old French barriques.
